荸荠原产印度。中国长江以南各省普遍栽培。荸荠用球茎繁殖,宜种植水塘中。荸荠的地下根茎为扁圆形,表面呈深褐色或枣红色。果肉为白色,可食。荸荠口感甜脆,营养丰富,含有蛋白质、脂肪、粗纤维、胡萝卜素、维生素B、维生素C、铁、钙和碳水化合物。
